Salmon Cakes with Homemade Basil Mayonnaise

One of the picture perfect entrees I made for the Doomsday Preppers filming were salmon cakes made from shelf-stable foods. Unfortunately though, they were adequate at best...definitely missing something. Thanks to wonderful friends who didn't see fit to make it known on national TV that the salmon cakes were probably not as enjoyable as the rest of the food. As a result I decided that I was going to find the PERFECT salmon cake recipe. So I began to scour my umpteen hundreds of recipes in books, files, and on the internet.

Canning Bananas and Pear Butter

The other day a friend of mine gave me a tip that you can obtain an entire case of bananas from most Wal-Marts in the nation simply by contacting the Produce Manager and asking them to take their old bananas off of their hands. The standard cost is only $5! There are instances in which some of the Wal-Marts have elected to donate their used produce to Food Banks or other community help centers, but it’s certainly doable a lot of the time in many areas of the U.S.

Cornbread Salad

When I make cornbread, I always make extra and then I’ll make cornbread croutons for this particular salad. It’s a nice twist on the same old boring side dishes and it’s got a little bit of a spicy, sassy kick to the flavor as well. The recipe is even better when I’m able to quickly make it from my freeze-dried produce. I also like how it uses herbs and spices that I can have on hand in my indoor herb garden or freeze-dried.

The Battle of Mice and Men

If you’re experiencing a problem with mice now, just wait until there’s a time that regular sanitation services aren’t available. The mild winter, flooding, and record heat have created a perfect storm for the mouse population. If you see signs of one in your home, there’s at least 34 others…for about 3 weeks anyway, in which time another litter of 4 to 6 are bred and the female then immediately  begins gestation again. Though the average lifespan of a mouse is 18 months, in that time they can produce 60-80 mice.

Greek Pilaf

This is my variation on a rice dish--something to jazz things up a bit with a side dish. It was inspired by the food I ate out in New England. Moosewood Restaurant is in Ithaca, NY but the whole food feel in all of their dishes is what I truly crave. So give t his a try. It's GREAT to stuff vegetables with such as green peppers, artichokes, eggplant, squash, zuchinni, and even grape leaves if you want to keep it all Greek. Enjoy!
