Grains: How Much and How to Cook

My husband tends to be just as picky as any of the kids I know when it comes to eating “healthy foods” so when he declared the culinary creation one of his favorite top 10, I was thrilled and relieved.  Relieved because it meant that I wasn’t going to have to eat the leftovers single handedly, and thrilled because it was an easy one for me to make.  I’ll be sure to share the recipe with you down below. Before I do that though, I wanted to clear up some of the confusion that folks have about how much wheat they should store and what they should be able to do with it. So here goes.

For starters, understand that a year of preparation supplies is my minimal benchmark. The most basic way to say why I use such reasoning is because a cursory look at all potential “disasters” would require at least a year in order for society to get back on its feet. A major earthquake, financial collapse, pandemic, flooding, and even unemployment in today’s market, is highly likely to require a year to cycle through the healing steps. As such, I recommend that everyone supply themselves with a year’s supply of necessities such as food, water, medical needs, clothing, etc.

Today, I want to take a look at just one component of this preparation, and that is your grain supply. Each person needs at least 300 pounds of grain supply for a year. I always say to have that much on hand regardless of the age of the persons in the household. The reason being is that you never know when you’ll be using those supplies, and you never know what you may elect to use in order to aid others as well. So instead of trying to analyze what your 3 year old may need now, just play it smart and have enough in the event your 3 year old turns into a 16 year old before you have time to change the amount of your supplies.

Amaranth Grain photo co purcellmountainfarmscom 300x231 Grains: How Much and How to CookUnderstand that grain preparedness can take on all different kinds of forms.  Wheat is what folks think of first usually, but remember that alternative wheat items such as quinoa, millet, and amaranth, are viable substitutes. Also keep in mind that if you are ever required to use your supplies exclusively, VARIETY is one thing for which you’ll be grateful. So mix things up a bit now. Grains include oats, pasta, cornmeal, rye, flaxseed, any type of flour, rice, barley, and corn. You could even supplement your grain supply with things like baking, pancake, bread, and muffin mixes as a part of your 600 pounds.  Out of all of these recommended grains though, wheat has the longest shelf-life, the most stable nutrition, and the most adaptability.  As such, I suggest that you make yourself as familiar with using it as possible.

There are 4 culinary aspects that I encourage everyone to learn to do with their wheat supply. One is to learn how to make pasta from scratch. This means that you’ll need to invest in a hand operated pasta maker so that you can quickly and easily make pasta such as ravioli, linguine, and spaghetti with it.  Wheat pasta tastes a bit different that regular pastas, so for starters you may want to expose your family to some wheat pasta dishes. There are several commercial wheat pastas that I have been easily able to use in my regular pasta dishes (including the one I made last weekend).

Hand crank pasta maker photo co cooking com 300x224 Grains: How Much and How to CookNext, I would make sure you can master making at least one type of bread with your wheat or other grains—be it rolls or bread loaves, or even just scones.  Sandwiches, and slices of bread can easily turn a “barely there” meal into a wonderfully memorable and satisfying one.  Keep in mind that the more fiber you have in your recipes, the more satisfying for a longer period of time they will be. In other words, having high quality meals full of fiber could actually reduce your need for a lot of other supplementary foods and could even reduce the number of meals per day you need. This kind of food also brings with it more energy and significantly better health.

Which reminds me of another aspect of using wheat.  You must introduce it into your diet now. Don’t wait until a scenario in which you have to live off of it. If you do, you could very easily cause dehydration, painful constipation, and even death if your body is not already used to high fiber in the diet. If you’re just now venturing into the use of wheat and high fiber into your meals, start with one serving each day of high fiber, then increase it to two, and then to three. You should be fine after that. Be sure that you drink PLENTY of water with this kind of a diet too. The fiber can only do its job if it’s accompanied by plenty of water, at least two quarts of drinking water every day per person.

Tortilla press photo co applepiepatispatecom 300x199 Grains: How Much and How to CookThe next culinary skill I would recommend is making homemade tortillas.  Tortillas are a great carrier for a variety of foods including salads. They are fairly simple to make, but the right tools and a little bit of practice will create a stress-free occasion for you later down the road. It’s easier to make them if you have a tortilla press; otherwise you’ll have to use a whole lot of physical energy getting them thin enough with a rolling pin. Besides, a tortilla press doesn’t require as much work space as a rolling pin would. I recommend that you do a search on The Food Network’s site and get Alton Brown’s recipe for tortillas. They turn out perfectly every time.

Lastly, I suggest you learn how to make your own pita bread.  Pita bread is very easy to make and it can be used as an alternative to bread in so many different ways. A piece of pita bread can accompany a meal or it can be the main part of the entree. You can easily make pita chips or large pita breads to stuff with a combination of sprouts, dressing, and seasoning. Yum!  Pita is also a good substitute for a pizza crust with only a fraction of the time to make it. Pita dough doesn’t require as much kneading, rising, and cooking time either. Remember, the easier something is to make, the less stress and the more energy you’ll have; out of all of the things that you need to prepare to conserve, your physical energy is at the top of the list.

(As you can see, all of the items in this recipe are easily found in a long-term pantry. This recipe can also successfully be cooked in a Solar Oven)

Spaghetti Pizza Casserole By Kellene Bishop

8 ounces of wheat spaghetti—cooked according to manufacturer instructions or 4 cups of cooked pasta

1 jar of your favorite spaghetti sauce (about 26 ounces)

4 cloves of garlic, minced

2 tablespoons of Shirley J Onion Seasoning

1-1½ pound of ground beef (I use that which I’ve already canned or browned and frozen)

2 cups plus 1 tablespoon of grated cheddar cheese (sharp cheddar is the best, but I also like Colby Jack, and Medium Cheddar)

½ cup plus 1 tablespoon of grated parmesan cheese

½ cup of sliced black olives

½ cup of sliced pepperoni, cut in halves or quarters

1 ½ cup of prepared Shirley J Universal Sauce or 1 can of cream of mushroom soup

½ cup of beef broth (I like to make this with the Shirley J Beef Broth combined with ½ cup of the water I used to cook my pasta in.)

Cook the pasta according to directions (the thin spaghetti works best for this recipe). Drain.

While the pasta is cooking, either brown or warm up your ground beef with the minced garlic and the onion seasoning. If it’s too fatty, be sure to drain off some of the fat before adding the seasoning.

In a large bowl combine the cooked ground beef, pasta sauce, Universal Sauce, beef broth, 1 cup of the grated cheese, and 1/2 cup of the parmesan cheese. Mix gently to incorporate all flavors throughout.

Then add the drained, cooked pasta. Mix gently and then pour ingredients into a 9 x 13 baking dish.

Top with the pepperoni and sliced black olives. Then top with another cup of the cheddar cheese.

Bake at 400 degrees for 25 minutes.

Remove from the oven and then top with the remaining cheeses. Serve and devour!

Serves 6. This recipe is easily doubled and tripled. You can also make it successfully without the pepperoni or black olives.

Tornado Warnings for Us All

tornado warning 300x198 Tornado Warnings for Us AllWhile I was teaching classes in Vegas this weekend, I had a gal come up to me and share some of her personal stories. One of which was about her daughter who lives in “tornado territory.” The woman shared with me that she was happy her daughter had finally started being mindful about being better prepared. She says that her daughter realized how often they hear tornado warnings and decided to “get on the stick.” The thought that came to my mind after hearing her story was how we ALL have tornado warnings going off all of the time. It’s my hope that we’ll learn to pay attention to them. Keep in mind that a tornado warning isn’t an indicator of death and destruction. It is a warning that now is the time for you to put your preparedness into practice. Thus the fact that we’re hearing the tornado warnings all around us in virtually every aspect of our environment, we are essentially being provided with “dress rehearsals” to help us be ready for the “live performance.” 

Throughout the weekend I was also surprised to have been asked by several people “how much longer” I thought we really had. Let’s be clear, I am not a prophet. I have no more access to information regarding what’s taking place on our world stage than you do. We all have access to the scriptures. The real question is, are we paying attention to all of the indicators that we have available to us? Here are the tornado warnings I see looming in the wings at present.

Unemployment rate has finally been admitted by the Obama administration to be over 10%. In actuality it’s over 22%.  But hey, at least they were willing to admit their dreaded number of over 10%. Just to give you a frame of reference, unemployment was at 33% during the Great Depression during which time the standard of living was less, the dollar was worth more, etc.

Our nation is at the most horrific sized national deficit than all of our history put together.

Our enemies are becoming more bold in their hatred of us.

Our U.S. Constitution barely remains intact.

I expect there to be a great war between Iraq and Israel by the end of the year.

We have an unprecedented excess of money in circulation with no accounting thereof, and no gold or silver to back it up. It’s all just paper.

We are being primed for a medical challenge. Whether it be a factual pandemic, or a contrived one, it will still have a serious effect if any portion of our population is put under a quarantine order.

We are looking at a genuine food shortage throughout the world. The bumper crop that USDA predicted this year will NOT happening, thus not only will our own flour, soy, corn, and sugar goods rise in price dramatically, but the United States will be unable to aid foreign nations since our own surplus supplies have been exhausted.

The work ethic of the young generation is seriously compromised today. This means that there is a lack of innovation, problem solving, and initiative which is critical to aiding in any in long term financial or political problems.

The value of our dollar has dropped sharply, by 50%, just in the last week.

A terrorist act has recently been carried out on our own soil against our servicemen, indicating that we are sorely unaware of the hatred and conspiracies which lurk among us.

Take all these tornado warnings along with the scriptures that will be fulfilled quite literally, and you can decide for yourself whether or not you think you’re going to get many more “dress rehearsals.”

Now, clearly I could go on, but sharing with you the gloom and doom of the day is not my goal. My point is that none of this is news to any of you. And yet it should all act as tornado warnings to all of us. We’d be foolish to wait until we actually saw the tornado itself prior to being better prepared, when the smell is clearly in the air that something is amiss.

May we be aware and be prepared that this country—in all of its greatness—may continue to be carried on the backs of solid, sound, and resolved citizens. Remember that only a prepared and sober people can accomplish such a task.

Pandemic or Not, It Doesn’t Matter

A lot of folks are e-mailing me or commenting that they don’t buy into all of this “hoopla” about the Swine Flu. My response is that it doesn’t matter whether or not the Swine flu amounts to anything at this moment, you STILL need to prepare for it. The point is that you should be preparing for the Swine Flu, Avian Flu, or Alien flu (yes, I made that up) the same way that you prepare for any other “disaster.” The only significance of the Swine Flu is the matter of timing. Due to the flu season and school starting back up, we MAY be looking at an imminent pandemic threat very soon. The fact of the matter is, you all still have a lot to do to get prepared to survive without all of your niceties that you’re used to. Just because the Swine Flu flurry may be perpetuated unnecessarily doesn’t make it any less of a circumstance to reckon ourselves with. I think that the issue with the Swine Flu being so pervasive in our minds is simply that it’s something that’s a bit more real to us. The timing of it is more visible. No one (who’s willing to admit it anyway) saw 9/11 coming. No one saw the damage that the tsunami was going to bring with it, and no one saw the complete disaster and horrible aftermath that Hurricane Katrina let loose on Louisiana either. Ask yourself, if you had a major earthquake tomorrow, would you be prepared? If your children all came down with some nasty flu and you were quarantined, would you be prepared?

Whether or not the Swine Flu ends up being equivalent to the Spanish Flu of 1918 is irrelevant. Yes, the Spanish Flu killed hundreds of millions of people. Yes, it affected virtually every part of the earth, even the Arctic and remote islands of the Pacific. But its biggest danger was that it came to people who were unaware, unlearned, and unprepared for such an instance. Thus what’s truly important is that you prepare for a pandemic situation like it right now while you can.

Here is a list of items for you that I recommend you have on hand in case you do end up having a patient who’s ill with a highly contagious flu virus. You will want to cordon off a room in your home for the care of such a person in order to avoid the unnecessary spreading of the virus. This list takes into consideration that you may or may not have electricity. (Obviously, this list is not all inclusive)

The Silence of the Swine Flu

Why are we hearing the silence of Swine Flu news so loudly?  Why did the fact that the deaths doubled in Utah due to Swine flu not make all of the front page news?  Why is the word quarantine used so sparingly in what little news there is available?  WHO classifies the Swine flu at “Pandemic” status and yet our border officials don’t ask a single health related question still.

I’ll tell you why.  But I warn you, it may actually be a bit disturbing.  At the risk of sounding like a “conspiracist” let me boil it down to two words for you.  Money and power.

Let’s look at all of this logically.

Yes, it will get worse: Yesterday I shared with you an article that warned of a possible quarantine of one week “if” the Swine flu became worse in the colder weather.  Folks, logically speaking we KNOW it’s going to get worse in the colder weather, because we can see what it’s doing now even in the midst of the warm weather.  HEAT stifles a virus wave.  And yet we’re still seeing fatalities.

Grocery Stores Will Stop Their Deliveries: If there is a quarantine issued, then that means that folks will NOT be able to permitted to purchase goods at the grocery store.  So what does that mean to the store?  They certainly won’t want any additional non-perishable good delivered during that week, right? (Although they will likely be cleaned out within 30 minutes of the quarantine being announced)  And then employees of the store will not be able to staff their locations, right?  So this means that no incoming deliveries will be able to come in.  Now apply this to hospitals, pharmacies, gas stations, etc.  That leads us to our next domino.

Businesses will LOSE millions of dollars. Criminals don’t typically strike where they are under watchful eyes, a.k.a. a lot of people.  Now you have all of these businesses laying isolated without the benefit of the coming and going traffic.  They are now ripe for vandalism and looting by individuals who would not have any respect for a quarantine mandate in the first place.  Millions of dollars of damage is anticipated from this very source even in the event of a “short” quarantine was required, let alone a 90 day one. Then you also have the sudden halt of tax generation, not only from sales tax in businesses, but also in employment taxes that will not be paid due to all of the employees who are forced to stay at home.  In a volatile economy, just one day of this kind of a halt in revenue could cripple even the strongest of states or counties.  I’m sure you’ve all read the e-mail which encourages people to not buy gasoline for one day in order to cost the oil companies millions of dollars in protest of their high prices.  Well, a one week quarantine will accomplish the very thing, except on a much larger scale!  Next domino.

The trucking industry: If a quarantine was ordered, even if it was only for 1 week, think about how much affect this would have on the trucking industry.  This industry is already barely surviving financially due to the gas price increases, the fewer crops to ship, etc.  Even if a quarantine was issued for only week, it could literally result in the closure of several trucking companies.  What many Americans may not realize, is that the crazy drivers who don’t signal when changing lanes, drive in the HOV lane when they aren’t supposed to, and who drive dangerously without sleep are actually critical to our way of life.  Without trucking our lives will dramatically change.  If there are only a few trucking companies left as a result of the financial damage of a quarantine, then the price of goods will skyrocket that much more.

Foreclosures: So many Americans are just barely living on the edge right now financially.  More than 80% of us live paycheck to paycheck.  Many of us cannot afford to miss a paycheck for a week, let alone 90 days.  But if that’s the case, how many of us would still be able to pay our mortgage payment or our electric bill, etc?  While those who operate such companies may not have a full staff due to a quarantine, you can bet that the computers will still be ticking your late payment days away.  Your late fees will build up, or your services could be automatically turned off.  This financial threat can compound into even more foreclosures.

The Panic Factor: Let’s not forget HOW a quarantine is enforced—by martial law.  Just the mention of this can cause an understandable panic on Wall Street and on Main Street everywhere.  I think even our Federal Reserve printing press couldn’t run fast enough to fix that kind of a mess.

These are just a few examples of the financial backlash that would occur as the result of a quarantine.  This is EXACTLY why you aren’t hearing more about the Swine flu and why officials aren’t taking more precautions to prevent the spread of the virus.  I can assure you there’s not a politician out there that wants a quarantine to happen “on their watch.”  Because if that were to occur, a quarantine and all of its consequences would indeed be what they were remembered for.

As I’ve said before, our economy is extremely volatile right now.  A quarantine could  cause a financial ripple effect that would truly send us back to the late 20’s.  And that, my friends, is exactly why what little warning you do get about preparing for a quarantine, is buried in a very non-descript manner in a local news broadcast.

The silence of the Swine Flu should be ringing very loudly for all of us.  While this may sound extreme to many of you, in my opinion it’s time to reconsider eating out at restaurants and going to the movie theaters for a while until this all blows over.  I’m thinking that the public pools this summer are not a smart place to go either.  Keep your kids involved in family-only activities vs. large group ones.  And use this time of relative comfort to get ready for the potential chaos that may ensue.

3 Reasons to Pay Attention to the Swine Flu

Is the Swine flu just something on the news, or should you actually be concerned about it from a preparation standpoint? The answer is yes, you should indeed be concerned about the Swine Flu—here are three important reasons why.

 

 

swine flu cellular 3 Reasons to Pay Attention to the Swine FluFirst of all, understand the virus itself and you will understand why informed concern is appropriate in this case. It is a mutation which has components of the Avian flu, the regular flu, and Swine flu. Avian flu is dangerous only in that it is transported from birds to people. It cannot be transferred from people to people. However, this strain of the Swine Flu can. So, if it continues to mutate, you can have a virus strain that not only transfers from person to person, but also from birds to people. As you know, birds have very little borders. They are able to spread their disease via the dust and any other airborne particles easily. Because this virus has already demonstrated a successful mutation of 3 different strains, it shows that it will clearly continue to do so. A mutated virus makes creating antigens in your body very difficult. And if YOU can’t even create the antigens, then a scientist cannot do so either. Additionally, this particular strain of flu is very different. Instead of simply attaching to cells in our body, it is actually able to penetrate the cell wall, thus making exposure to antigens much more challenging. This particular strain of influenza, because it is compromised of H1N1 (Swine) and H5N1 (Avian) makes it an extremely penetrable and deadly virus which is rapidly adaptable and virulent. These two strains combined produce a killing potential at a cellular level.

 

 

cdc 3 Reasons to Pay Attention to the Swine FluAnother reason to be concerned is that the confirmed cases of Swine flu that we have been told by the media to date have been done so through the very limited availability of test kits from the CDC (Center for Disease Control). Understand that only the CDC can “confirm” a case of this type of virus. And the CDC only this week began sending out test kits to parts of the U.S. and to other parts of the world as well. We already have cases which have spread to New Zealand, Scotland, Brazil, Australia, and Canada. What all of this means is that we haven’t even begun to see the real numbers of people affected this flu epidemic. Keep in mind that viruses in general are not living organisms, rather they are protein structures whose only goal is to replicate themselves.

 

The third reason why we should indeed be concerned is because even if this isn’t “the big one” it is certainly an incident which should wake us from our slumber of apathy. There is much to be learned from this outbreak that can literally save our lives. Looking at this outbreak and analyzing how we can better be prepared in the event that a pandemic affects our country and even the world, is the best way to prepare. However, having said that, I would prefer that you not underestimate the efficacy of this particular outbreak. To do so would be sugarcoating a situation with strychnine. Let’s not forget the facts thus far here. Schools are being shut down. DHS is taking action to be prepared for a possible pandemic. (Compare this to the fact that FEMA can’t even take action until after a serious crisis has occurred—this should tell you something.) The World Health Organization is NOT closing the borders because they state that such an act would be futile since the virus is already established widespread. (Remember what I said about not even having the real numbers yet?) One case of the Swine flu on a plane headed to JFK, La Guardia, Salt Lake City, Los Angeles, the San Francisco international airport and you can easily have a pandemic. (Come on. Think about it. You know how incredibly dirty the air on the airplanes are. Do you actually think that the air filtration systems on board will filter out this virus from traveling from one host to another?) Keep in mind that individuals who are carrying the virus may simply be a host. They may carry it to others without necessarily manifesting symptoms of it themselves. So you may assume that you are interacting with a perfectly healthy person, but still contract the virus strain.

 

 

I’m not being a fear monger here. As someone who tends to get emotionally involved in the well-being of others, I’m trying to get you to be fully aware of how fast this or other strains like it can spread. It will be incredibly difficult for me to see so many that I know and love exposed to such an illness such as the swine flu. So, given that I do believe you have need to be cautious in this situation and most definitely to learn from it, allow me to share with you how your behavior must change in the event of a full-spread outbreak. Review the following steps so that you can truly be prepared for such an event:

 

 

1) Always use a breathing mask outside of your home.

 

2) Wash your hands constantly and do not remove or put on your breathing mask without having just washed your hands

 

3) Keep your hands away from your eyes and mouth under all circumstances. (Use a fork even to eat your French fries with.)

 

4) Do not eat any food which you have not personally prepared

Don’t wait until symptoms appear. While viruses tend to mutate and get stronger under chemical attacks, they respond completely differently to non-chemical, strong environments. I STRONGLY suggest that you ingest sublingual (taken under the tongue) or colloidal versions of your nutrition supplements as such methods are actually able to permeate the cells. 6) Be sure you wash ALL of your vegetables (even the ones with skins) and meats very well prior to storing or cooking them. Also be sure to wipe off your cans of food prior to opening them. When you do follow these steps also be sure that you keep your hands washed afterwards as well. Here’s a natural wash for your meats and vegetables that you can make yourself.

· 1/4 cup Vinegar

· 2 Tablespoons salt

Fill a clean sink with cold water, (a plastic dish pan also works wonders) add vinegar and salt and let sit 15 minutes, rinse. (The vinegar cleans the fruits and vegetables, while the salt draws out any maggots and such, dirt and other undesirable components. This wash does not adversely affect the flavor at all and vinegar helps take care of the sprays and wax they tend to use.

8.) Use Latex gloves when handling items from outside of your home or when assisting other individuals (whether they manifest symptoms or not) outside of your home.

 

9) Eliminate contact with other people outside of your home as much as is truly possible.

 

10)Don’t leave your home unless you absolutely have to. In such an instance, be sure that you are adorned with a breathing mask and have latex gloves. (If this particular strain were able to mutate into a flu strain that cannot only be transferred from person to person, but also from birds to person, then it’s critical that you leave your home only at night, not during the day as birds typically only fly during the day light hours.)

How Can You Be Prepared For The Swine Flu?

Hopefully the news as of late regarding the spread of Swine flu has you concerned to some degree of your own exposure. Or perhaps the news has at least made you aware that your emergency preparedness supplies aren’t presently sufficient for such a crisis. If you’re becoming aware of such a situation, that’s actually the best thing that can result from the news of this epidemic. Because the good news is that you can be prepared for this and other like ailments by taking some proactive steps now.  Being prepared independently to handle such a crisis as a Swine flu epidemic is critical. Believing that life will always be “normal enough” for you to plan on having access to the “anti-virus” or vaccination shortly after the time of exposure is truly a gamble of Russian roulette proportions. 

First let’s look at some supplies that you will want to have on hand for external physical benefits.

 1. Breathing mask: A great deal of flu diseases are spread airborne. As such, being sure to protect your nose and your mouth from inhaling the disease or even from spreading it should you have been exposed to it is critical. Breathing masks are much like what you see on the doctors or nurses faces during a surgery. They do not have to be a heavy plastic. (In fact, if you do end up having to wear them for an extended period of time, you’ll wish that they aren’t heavy.) Instead, you can purchase lightweight version at your bulk wholesale stores. You will need to anticipate needed one per person in your home for each day that you may have to ride out an epidemic.

Hand Sanitizer: While washing your hands with hot soap and water frequently is preferable, it’s not realistic should you have to endure a bio-crisis such as this. So be sure that you have a quality hand sanitizer on hand. Again, you want to be sure that you do not underestimate the quantity of this item to have readily accessible. Not only will it prove useful for spreading a disease, but it’s ideal for everyday use as you ride out any other type of emergency which requires you to live off of your supplies.

 3. Homeopathic Remedies: It’s important that you familiarize yourself with herbal or other types of remedies that can assist individuals who are exposed to something like the Swine flu. The more universal the remedy is, the better so that you don’t have to become a “pharmacy” of remedies. Storage space is valuable, right? I’ve researched a great deal of remedies and my first advice to you is to partake of something regularly now which truly strengthens your immune system. Use a quality nutrition supplement now in order to ensure your health later when such a disaster may affect you. 4. In addition to these remedies to begin ingesting now, (you can also use them for crisis remedies as well) here is a list of other alternative remedies you may want to have on hand:

Oil of Oregano (a dose of two drops tastes nasty, but it will kill most any virus.)
Oscillococcinum
Gelsemium
Bryonia
Rhus Tox

5. Knowledge: Yes, it’s true. You don’t want to bet your life on the utilizations of methods that you aren’t familiar with. So obtaining the knowledge you need to properly use such alternative methods is critical. The good news is that finding the right homeopathic medicine for the flu is actually relatively straightforward because the symptoms are easy to identify and universally evident in most flu strains. (Fever, body aches, sore throat, cough, runny nose, vomiting, diarrhea, and lethargy.) Additionally, you can take comfort in the fact that homeopaths have treated viral illnesses, including the flu as early as the 1918 flu pandemic.
