The winner of the EcoZoom Stove Contest is Renee L.! Congratulations to Renee for her winning entry "Elvis Presley Cake". Thank you to all who sent in recipes for this contest. It took us quite a while to go through and test them all, but Renee's recipe just hit us as FABULOUS. And we're going to share it with all of you as well. Enjoy!
Elvis Presley Cake
1 Yellow Cake mix bake as directed on the box for 9 x 13 pan and cooled
In a saucepan bring to a boil
1 8oz can crushed pineapple with juice
2 cups brown sugar
Remove from the heat and melt in 1/4 cup butter.
Using the handle of the wooden spoon poke holes about 2/3rds of the way into the cake. Spread the pineapple mixture over the cake and into the holes. Allow the cake to cool and then frost with the following frosting.
1 8oz package of cream cheese
1/2 cup butter
1 tsp vanilla
3 1/2 - 4 cups powdered sugar
Beat cream cheese and butter until smooth. Beat in vanilla. Add powdered sugar and beat until smooth. Spread frosting over cake and store in the refrigerator.
Renee claims that the cake tastes better the next day--if you can wait that long. We didn't. *grin*
